Ingredients
- Nori sheets - 2
- Cauliflower rice - 200 grams
- Cream cheese - 100 grams
- Cheddar cheese - 50 grams, shredded
- Spinach - 50 grams, blanched
- Carrot - 50 grams, julienned
- Cucumber - 50 grams, julienned
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black sesame seeds - 1 teaspoon
Steps
- Prepare the cauliflower rice by grating cauliflower or processing it in a food processor until it resembles rice grains.
- In a skillet over medium heat, lightly sauté the cauliflower rice for about 5 minutes, seasoning with a pinch of salt and sesame oil. Remove from heat and let cool.
- In a mixing bowl, combine the cream cheese and shredded cheddar cheese until well blended.
- Lay out a nori sheet on a bamboo mat or a clean surface, shiny side down.
- Spread a thin layer of the cauliflower rice evenly over the nori, leaving about 2 cm at the top edge.
- In the center of the rice, place a line of the cheese mixture, followed by the blanched spinach, julienned carrot, and cucumber.
- Starting from the bottom of the nori sheet, carefully roll it up, pressing gently to ensure a tight roll. Seal the edge with a little water.
- Repeat the process with the second nori sheet and remaining ingredients.
- Using a sharp knife, slice the rolls into bite-sized pieces and sprinkle with black sesame seeds.
- Serve with soy sauce on the side for dipping.
