Ingredients

  • Nori sheets - 2
  • Cauliflower rice - 200 grams
  • Cream cheese - 100 grams
  • Cheddar cheese - 50 grams, shredded
  • Spinach - 50 grams, blanched
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon

Steps

  1. Prepare the cauliflower rice by grating cauliflower or processing it in a food processor until it resembles rice grains.
  2. In a skillet over medium heat, lightly sauté the cauliflower rice for about 5 minutes, seasoning with a pinch of salt and sesame oil. Remove from heat and let cool.
  3. In a mixing bowl, combine the cream cheese and shredded cheddar cheese until well blended.
  4. Lay out a nori sheet on a bamboo mat or a clean surface, shiny side down.
  5. Spread a thin layer of the cauliflower rice evenly over the nori, leaving about 2 cm at the top edge.
  6. In the center of the rice, place a line of the cheese mixture, followed by the blanched spinach, julienned carrot, and cucumber.
  7. Starting from the bottom of the nori sheet, carefully roll it up, pressing gently to ensure a tight roll. Seal the edge with a little water.
  8. Repeat the process with the second nori sheet and remaining ingredients.
  9. Using a sharp knife, slice the rolls into bite-sized pieces and sprinkle with black sesame seeds.
  10. Serve with soy sauce on the side for dipping.
