Ingredients
- Cauliflower - 300 grams
- Shredded mozzarella cheese - 150 grams
- Cooked chicken breast, shredded - 150 grams
- Gochujang (Korean chili paste) - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic, minced - 2 cloves
- Green onion, chopped - 2 stalks
- Red bell pepper, sliced - 1/2
- Onion, sliced - 1/2
- Egg - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and cool slightly.
- Once cool, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, 50 grams of mozzarella cheese, egg, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture evenly on a parchment-lined baking sheet, forming a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes until golden and firm.
- While the crust is baking, prepare the Dakgalbi topping by mixing shredded chicken, gochujang, soy sauce, sesame oil, minced garlic, sliced onion, and red bell pepper in a bowl. Let it marinate for 10 minutes.
- After 20 minutes, remove the crust from the oven. Top it with the marinated chicken mixture evenly over the crust.
- Sprinkle the remaining mozzarella cheese on top and add chopped green onions.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly browned.
- Remove from the oven, let it cool slightly, then slice and serve warm.
