Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Cooked chicken breast, shredded - 150 grams
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Green onion, chopped - 2 stalks
  • Red bell pepper, sliced - 1/2
  • Onion, sliced - 1/2
  • Egg - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and cool slightly.
  3. Once cool, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, 50 grams of mozzarella cheese, egg, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture evenly on a parchment-lined baking sheet, forming a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 20 minutes until golden and firm.
  7. While the crust is baking, prepare the Dakgalbi topping by mixing shredded chicken, gochujang, soy sauce, sesame oil, minced garlic, sliced onion, and red bell pepper in a bowl. Let it marinate for 10 minutes.
  8. After 20 minutes, remove the crust from the oven. Top it with the marinated chicken mixture evenly over the crust.
  9. Sprinkle the remaining mozzarella cheese on top and add chopped green onions.
  10. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly browned.
  11. Remove from the oven, let it cool slightly, then slice and serve warm.
