Ingredients

  • Chayote - 1 medium (about 200g)
  • Carrot - 1 small (about 50g)
  • Bell pepper - 1/2 medium (about 75g)
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Olive oil - 1 tablespoon (15ml)
  • Sesame seeds - 1 teaspoon (5g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and peel the chayote, then slice it thinly.
  2. Peel the carrot and cut it into thin matchsticks.
  3. Remove the seeds from the bell pepper and slice it into thin strips.
  4. In a large frying pan or wok, heat the olive oil over medium heat.
  5. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  6. Add the chayote, carrot, and bell pepper to the pan, stirring frequently for about 5-7 minutes until the vegetables are tender yet crisp.
  7. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly.
  8. Add the chopped green onions, salt, and black pepper to taste, and stir-fry for another 2 minutes.
  9. Remove from heat and sprinkle sesame seeds on top before serving.
