Ingredients
- Chayote - 1 medium (about 200g)
- Carrot - 1 small (about 50g)
- Bell pepper - 1/2 medium (about 75g)
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Soy sauce - 1 tablespoon (15ml)
- Sesame oil - 1 teaspoon (5ml)
- Olive oil - 1 tablespoon (15ml)
- Sesame seeds - 1 teaspoon (5g)
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and peel the chayote, then slice it thinly.
- Peel the carrot and cut it into thin matchsticks.
- Remove the seeds from the bell pepper and slice it into thin strips.
- In a large frying pan or wok, heat the olive oil over medium heat.
- Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the chayote, carrot, and bell pepper to the pan, stirring frequently for about 5-7 minutes until the vegetables are tender yet crisp.
- Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly.
- Add the chopped green onions, salt, and black pepper to taste, and stir-fry for another 2 minutes.
- Remove from heat and sprinkle sesame seeds on top before serving.
