Chaplyeong Juk

Ingredients
- Glutinous rice - 100g
- Water - 600ml
- Zucchini - 50g, diced
- Carrot - 50g, diced
- Mushrooms (shiitake or button) - 50g, sliced
- Spinach - 30g, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Green onions - 1 stalk, chopped for garnish
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the rice and add it to a pot with 600ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and let the rice simmer for about 20 minutes, stirring occasionally, until it becomes porridge-like.
- While the rice is cooking, heat sesame oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
- Add the diced zucchini, carrot, and sliced mushrooms to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
- Add the chopped spinach to the pan and cook for an additional 2 minutes until wilted.
- Once the rice is cooked, mix in the sautéed vegetables, soy sauce, salt, and pepper. Adjust seasoning to taste.
- Serve hot, garnished with chopped green onions.
