Chaplyeong Juk

Ingredients

  • Glutinous rice - 100g
  • Water - 600ml
  • Zucchini - 50g, diced
  • Carrot - 50g, diced
  • Mushrooms (shiitake or button) - 50g, sliced
  • Spinach - 30g, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Green onions - 1 stalk, chopped for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the rice and add it to a pot with 600ml of fresh water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low and let the rice simmer for about 20 minutes, stirring occasionally, until it becomes porridge-like.
  4. While the rice is cooking, heat sesame oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  5. Add the diced zucchini, carrot, and sliced mushrooms to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
  6. Add the chopped spinach to the pan and cook for an additional 2 minutes until wilted.
  7. Once the rice is cooked, mix in the sautéed vegetables, soy sauce, salt, and pepper. Adjust seasoning to taste.
  8. Serve hot, garnished with chopped green onions.
