Ingredients
- Glutinous rice - 150g
- Water - 300ml
- Coconut milk - 100ml
- Maple syrup - 2 tablespoons
- Mixed fruits (e.g., mango, kiwi, strawberries) - 200g, diced
- Sesame seeds - 1 tablespoon
- Chopped nuts (e.g., almonds, walnuts) - 2 tablespoons
Steps
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
- Drain the soaked rice and transfer it to a steamer basket lined with cheesecloth. Steam the rice over simmering water for about 30 minutes, or until cooked and tender.
- In a small saucepan, combine the coconut milk and maple syrup over low heat. Stir until warmed and well mixed, then remove from heat.
- Once the rice is cooked, transfer it to a mixing bowl and gently fold in the coconut milk mixture until well combined.
- Divide the sticky rice into two serving bowls. Top each bowl with the diced mixed fruits, then sprinkle sesame seeds and chopped nuts over the top.
- Drizzle additional maple syrup if desired, and serve warm or at room temperature.
