Ingredients

  • Short-grain rice - 1 cup
  • Water - 1 1/2 cups
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Spinach - 100 grams, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, bring 1 1/2 cups of water to a boil, then add the soaked rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 15 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat a large skillet over medium heat. Add sesame oil and sauté minced garlic and grated ginger for 1 minute until fragrant.
  4. Add the julienned carrot and zucchini to the skillet, and stir-fry for about 3-4 minutes until slightly tender.
  5. Add the chopped spinach and cook for an additional 2-3 minutes until wilted. Season the vegetables with soy sauce, salt, and black pepper to taste.
  6. Once the rice is done, fluff it with a fork and mix it with the sautéed vegetables in the skillet. Stir well to combine.
  7. Serve hot, garnished with chopped green onion and sesame seeds.
