Ingredients
- Short-grain rice - 1 cup
- Water - 1 1/2 cups
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Spinach - 100 grams, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, bring 1 1/2 cups of water to a boil, then add the soaked rice and a pinch of salt. Cover and reduce the heat to low, cooking for about 15 minutes until the rice is tender and water is absorbed.
- While the rice is cooking, heat a large skillet over medium heat. Add sesame oil and sauté minced garlic and grated ginger for 1 minute until fragrant.
- Add the julienned carrot and zucchini to the skillet, and stir-fry for about 3-4 minutes until slightly tender.
- Add the chopped spinach and cook for an additional 2-3 minutes until wilted. Season the vegetables with soy sauce, salt, and black pepper to taste.
- Once the rice is done, fluff it with a fork and mix it with the sautéed vegetables in the skillet. Stir well to combine.
- Serve hot, garnished with chopped green onion and sesame seeds.
