- Cauliflower - 300 grams (about 1/2 head)
- Carrot - 1 medium (about 100 grams), julienned
- Cucumber - 1 small (about 100 grams), julienned
- Green onion - 2 stalks, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Honey - 1 teaspoon (or sugar substitute for low-carb)
- Rice vinegar - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice, about 5-7 pulses.
- Spread the riced cauliflower on a baking sheet and bake for 15 minutes until slightly crispy, stirring halfway through.
- In a small bowl, mix together sesame oil, soy sauce, gochujang, honey, rice vinegar, and salt to create the sauce.
- Once the cauliflower is done, let it cool for a few minutes, then combine it in a large bowl with the julienned carrot, cucumber, and chopped green onion.
- Pour the sauce over the vegetable mixture and toss well to combine.
- Serve the dish in bowls, garnished with toasted sesame seeds.
