Ingredients

  • Cauliflower - 300 grams (about 1/2 head)
  • Carrot - 1 medium (about 100 grams), julienned
  • Cucumber - 1 small (about 100 grams), julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Honey - 1 teaspoon (or sugar substitute for low-carb)
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice, about 5-7 pulses.
  3. Spread the riced cauliflower on a baking sheet and bake for 15 minutes until slightly crispy, stirring halfway through.
  4. In a small bowl, mix together sesame oil, soy sauce, gochujang, honey, rice vinegar, and salt to create the sauce.
  5. Once the cauliflower is done, let it cool for a few minutes, then combine it in a large bowl with the julienned carrot, cucumber, and chopped green onion.
  6. Pour the sauce over the vegetable mixture and toss well to combine.
  7. Serve the dish in bowls, garnished with toasted sesame seeds.
