- Bulgur wheat - 100 grams
- Water - 250 milliliters
- Carrot - 50 grams, grated
- Zucchini - 50 grams, grated
- Green onion - 2 stalks, finely chopped
- Egg - 1 large
- All-purpose flour - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Rinse the bulgur wheat under cold water and then soak it in 250 milliliters of water for about 15 minutes until it absorbs the water and becomes tender.
- In a mixing bowl, combine the soaked bulgur, grated carrot, grated zucchini, chopped green onion, egg, all-purpose flour, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Scoop about 1/4 cup of the bulgur mixture into the skillet for each pancake, flattening it slightly with the back of a spatula. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Repeat the process, adding more oil to the skillet as needed, until all the mixture is used.
- Serve the Bulgur Jeon warm with additional soy sauce or dipping sauce on the side.
