Ingredients

  • Bulgur wheat - 100 grams
  • Water - 250 milliliters
  • Carrot - 50 grams, grated
  • Zucchini - 50 grams, grated
  • Green onion - 2 stalks, finely chopped
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Rinse the bulgur wheat under cold water and then soak it in 250 milliliters of water for about 15 minutes until it absorbs the water and becomes tender.
  2. In a mixing bowl, combine the soaked bulgur, grated carrot, grated zucchini, chopped green onion, egg, all-purpose flour, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
  4. Scoop about 1/4 cup of the bulgur mixture into the skillet for each pancake, flattening it slightly with the back of a spatula. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  5. Repeat the process, adding more oil to the skillet as needed, until all the mixture is used.
  6. Serve the Bulgur Jeon warm with additional soy sauce or dipping sauce on the side.
