- Firm tofu - 300 grams
- Soy sauce - 3 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Cooked rice (white or brown) - 2 cups
- Sesame seeds - 1 tablespoon
- Spinach - 100 grams, blanched
- Cucumber - 1 small, sliced
Steps
- Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, mix the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Add the tofu cubes to the marinade and let them soak for at least 15 minutes.
- Heat a non-stick skillet over medium-high heat and add the marinated tofu along with the marinade. Stir-fry for about 8-10 minutes until the tofu is golden and slightly crispy.
- While the tofu is cooking, prepare the vegetables: julienne the carrot, slice the red bell pepper, and slice the cucumber.
- In serving bowls, place a generous scoop of cooked rice as the base.
- Top the rice with the stir-fried tofu, blanched spinach, julienned carrot, sliced bell pepper, and cucumber.
- Garnish with chopped green onions and sprinkle sesame seeds on top before serving.
