Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Cooked rice (white or brown) - 2 cups
  • Sesame seeds - 1 tablespoon
  • Spinach - 100 grams, blanched
  • Cucumber - 1 small, sliced

Steps

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, mix the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Add the tofu cubes to the marinade and let them soak for at least 15 minutes.
  4. Heat a non-stick skillet over medium-high heat and add the marinated tofu along with the marinade. Stir-fry for about 8-10 minutes until the tofu is golden and slightly crispy.
  5. While the tofu is cooking, prepare the vegetables: julienne the carrot, slice the red bell pepper, and slice the cucumber.
  6. In serving bowls, place a generous scoop of cooked rice as the base.
  7. Top the rice with the stir-fried tofu, blanched spinach, julienned carrot, sliced bell pepper, and cucumber.
  8. Garnish with chopped green onions and sprinkle sesame seeds on top before serving.
