Ingredients

  • Beef sirloin, thinly sliced - 200 grams
  • Soy sauce (kosher) - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Corn tortilla chips - 150 grams
  • Shredded mozzarella cheese - 100 grams
  • Sliced green onions - 2 tablespoons
  • Kimchi, chopped - 50 grams
  • Sour cream (kosher) - 2 tablespoons
  • Sriracha sauce - 1 teaspoon

Steps

  1. In a mixing bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Add the thinly sliced beef sirloin to the marinade and let it sit for at least 15 minutes for the flavors to meld.
  3. While the beef is marinating, preheat your oven to 200°C (400°F).
  4. Spread the corn tortilla chips evenly on a baking tray.
  5. Once the beef is marinated, heat a skillet over medium-high heat and cook the beef for 5-7 minutes, or until browned and cooked through.
  6. Remove the beef from the skillet and evenly distribute it over the tortilla chips.
  7. Sprinkle the shredded mozzarella cheese over the beef and chips.
  8. Bake the nachos in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and top with chopped kimchi and sliced green onions.
  10. In a small bowl, mix the sour cream and Sriracha sauce together, then drizzle over the nachos before serving.
