- Pizza dough - 250 grams
- Shiitake mushrooms - 150 grams, sliced
- Button mushrooms - 100 grams, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Brown sugar - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Mozzarella cheese - 200 grams, shredded
- Gojujang (Korean chili paste) - 1 tablespoon
- Sesame seeds - 1 teaspoon, for garnish
- Fresh cilantro - a handful, for garnish
Steps
- Preheat the oven to 220°C (425°F).
- In a large skillet, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add the sliced shiitake and button mushrooms to the skillet, followed by soy sauce and brown sugar. Cook for about 5-7 minutes, or until the mushrooms are tender and have released their moisture.
- Remove the skillet from heat and stir in the chopped green onions and gochujang. Mix until well combined.
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a pizza stone or baking sheet.
- Spread the mushroom mixture evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle the shredded mozzarella cheese generously over the top of the mushroom mixture.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
- Once done, remove the pizza from the oven, and let it cool for a minute. Garnish with sesame seeds and fresh cilantro before slicing.
