Ingredients

  • Pizza dough - 250 grams
  • Shiitake mushrooms - 150 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Mozzarella cheese - 200 grams, shredded
  • Gojujang (Korean chili paste) - 1 tablespoon
  • Sesame seeds - 1 teaspoon, for garnish
  • Fresh cilantro - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a large skillet, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add the sliced shiitake and button mushrooms to the skillet, followed by soy sauce and brown sugar. Cook for about 5-7 minutes, or until the mushrooms are tender and have released their moisture.
  4. Remove the skillet from heat and stir in the chopped green onions and gochujang. Mix until well combined.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a pizza stone or baking sheet.
  6. Spread the mushroom mixture evenly over the pizza dough, leaving a small border around the edges.
  7. Sprinkle the shredded mozzarella cheese generously over the top of the mushroom mixture.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
  9. Once done, remove the pizza from the oven, and let it cool for a minute. Garnish with sesame seeds and fresh cilantro before slicing.
