Ingredients
- Canned young green jackfruit in brine - 400 grams
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Rice vinegar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon (for frying)
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Cucumber, sliced - 1/2 cup
- Carrot, shredded - 1/2 cup
- Sriracha mayo (vegan mayo mixed with sriracha) - 4 tablespoons
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Drain and rinse the jackfruit thoroughly under cold water. Remove the seeds and cut the jackfruit into smaller pieces or shred it with your hands.
- In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Add the jackfruit to the marinade and let it sit for at least 15 minutes.
- Heat vegetable oil in a skillet over medium heat. Add the marinated jackfruit and cook for about 10-15 minutes, stirring occasionally, until it's heated through and slightly caramelized.
- While the jackfruit cooks, prepare the burger buns by toasting them lightly on a pan or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a generous portion of the cooked jackfruit, sliced cucumber, and shredded carrot.
- Spread 2 tablespoons of sriracha mayo on the top half of the buns, sprinkle with sesame seeds, and place it on top of the assembled burger.
- Serve immediately and enjoy your Bulgogi Jackfruit Burger!
