Ingredients

  • Beef sirloin - 200 grams
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Spinach - 100 grams, blanched
  • Cooked white rice - 1 cup
  • Seaweed sheets (gimbap/nori) - 4 sheets
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add thinly sliced beef and marinate for at least 15 minutes.
  2. While the beef marinates, prepare the vegetables: julienne the carrot and cucumber, and blanch the spinach in boiling water for 1 minute, then drain and rinse under cold water.
  3. In a skillet over medium-high heat, cook the marinated beef for about 5-7 minutes, or until fully cooked. Remove from heat and let it cool slightly.
  4. Lay a seaweed sheet on a bamboo mat or clean surface. Spread 1/4 cup of cooked rice evenly over the seaweed, leaving a 2 cm border at the top.
  5. Place a strip of cooked beef, some julienned carrot, cucumber, and a handful of blanched spinach on top of the rice.
  6. Sprinkle a few sesame seeds over the filling. Starting from the bottom, roll the gimbap tightly, using the mat to help shape it.
  7. Repeat the rolling process with the remaining seaweed sheets and filling ingredients.
  8. Once rolled, slice each gimbap into bite-sized pieces and serve with pickled vegetables or soy sauce.
