Ingredients
- Cauliflower - 300 grams
- Beef sirloin, thinly sliced - 200 grams
- Soy sauce - 3 tablespoons
- Brown sugar or sugar substitute - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green onion, chopped - 2 stalks
- Black pepper - 1/2 teaspoon
- Cooking oil - 1 tablespoon
- Sesame seeds, for garnish - 1 tablespoon
Steps
- In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and black pepper to create the bulgogi marinade.
- Add the thinly sliced beef to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- While the beef is marinating, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower, and cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a large skillet over medium heat, add cooking oil. Once hot, add the marinated beef and cook for about 5-7 minutes, stirring frequently, until the beef is browned and cooked through.
- Remove the beef from the skillet and set aside. In the same skillet, add the cauliflower rice and sauté for about 5-7 minutes, or until tender.
- Add the cooked beef back into the skillet with the cauliflower rice, mixing well to combine. Stir in chopped green onions and cook for an additional 2 minutes.
- Serve the Bulgogi Cauliflower Rice hot, garnished with sesame seeds and additional green onions if desired.
