  • Zucchini - 1 medium, julienned
  • Spinach - 100 grams, blanched
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Eggs - 2 large
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped

Steps

  1. In a bowl, combine soy sauce, sugar, sesame oil, minced garlic, and grated ginger. Add the sliced beef and marinate for at least 15 minutes.
  2. While the beef is marinating, cook the rice according to package instructions.
  3. In a pan, heat a little oil over medium heat and sauté the mushrooms until tender. Season with salt and pepper, then set aside.
  4. In the same pan, stir-fry the julienned carrots and zucchini until they are tender yet crisp. Season with salt and pepper, then set aside.
  5. In a separate pot, blanch the spinach in boiling water for 1 minute, then drain and set aside.
  6. In the same pan used for the vegetables, cook the marinated beef over medium-high heat until fully cooked, about 5-7 minutes.
  7. In a non-stick skillet, fry the eggs sunny-side up to your preference.
  8. To assemble the bibimbap, place a serving of rice in a bowl, and top with the cooked beef, sautéed vegetables, spinach, and a fried egg on top.
  9. Sprinkle with sesame seeds and chopped green onions before serving. Mix before eating to enjoy the flavors!
