Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Soy sauce - 3 tablespoons
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then combine with 300ml of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed.
  2. While the rice is cooking, prepare the marinade by mixing soy sauce, maple syrup, sesame oil, minced garlic, and grated ginger in a bowl.
  3. Add the sliced shiitake mushrooms, julienned carrot, zucchini, and red bell pepper to the marinade, ensuring they are well coated. Let them marinate for about 10 minutes.
  4. In a large skillet over medium heat, add the marinated vegetables along with the marinade. Sauté for 5-7 minutes until the vegetables are tender and cooked through.
  5. Once the rice is done, fluff it with a fork and season with salt and black pepper to taste.
  6. To serve, divide the rice between two bowls, top with the sautéed vegetables, and garnish with chopped green onions and sesame seeds.
