- Basmati rice - 150 grams
- Water - 300 milliliters
- Shiitake mushrooms - 100 grams, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Soy sauce - 3 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then combine with 300ml of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed.
- While the rice is cooking, prepare the marinade by mixing soy sauce, maple syrup, sesame oil, minced garlic, and grated ginger in a bowl.
- Add the sliced shiitake mushrooms, julienned carrot, zucchini, and red bell pepper to the marinade, ensuring they are well coated. Let them marinate for about 10 minutes.
- In a large skillet over medium heat, add the marinated vegetables along with the marinade. Sauté for 5-7 minutes until the vegetables are tender and cooked through.
- Once the rice is done, fluff it with a fork and season with salt and black pepper to taste.
- To serve, divide the rice between two bowls, top with the sautéed vegetables, and garnish with chopped green onions and sesame seeds.
