Ingredients

  • Korean chives (buchu) - 100 grams
  • Carrot - 50 grams, grated
  • Zucchini - 50 grams, grated
  • Mushrooms (shiitake or oyster) - 100 grams, finely chopped
  • All-purpose flour - 100 grams
  • Cornstarch - 25 grams
  • Vegetable broth - 150 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a large mixing bowl, combine all-purpose flour, cornstarch, vegetable broth, soy sauce, sesame oil, salt, and black pepper to create a batter.
  2. Add the grated carrot, zucchini, chopped mushrooms, and Korean chives to the batter. Mix until well combined.
  3. Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil.
  4. Pour half of the batter into the pan, spreading it evenly to form a pancake about 1 cm thick.
  5. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes until both sides are crispy.
  6. Repeat the process with the remaining batter, adding more oil as needed.
  7. Once cooked, remove the pancakes from the pan and let them drain on paper towels before serving.
