- Carrot - 50 grams, grated
- Zucchini - 50 grams, grated
- Mushrooms (shiitake or oyster) - 100 grams, finely chopped
- All-purpose flour - 100 grams
- Cornstarch - 25 grams
- Vegetable broth - 150 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a large mixing bowl, combine all-purpose flour, cornstarch, vegetable broth, soy sauce, sesame oil, salt, and black pepper to create a batter.
- Add the grated carrot, zucchini, chopped mushrooms, and Korean chives to the batter. Mix until well combined.
- Heat a non-stick frying pan over medium heat and add a tablespoon of vegetable oil.
- Pour half of the batter into the pan, spreading it evenly to form a pancake about 1 cm thick.
- Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes until both sides are crispy.
- Repeat the process with the remaining batter, adding more oil as needed.
- Once cooked, remove the pancakes from the pan and let them drain on paper towels before serving.
