- Soy sauce - 60 ml
- Water - 200 ml
- Rice wine (Mirin) - 30 ml
- Brown sugar - 1 tablespoon (15 grams)
- Garlic - 4 cloves, minced
- Ginger - 10 grams, sliced
- Green onion - 2 stalks, chopped
- Carrot - 1 medium, sliced
- Sesame oil - 1 teaspoon (5 ml)
- Black pepper - 1/2 teaspoon
- Sesame seeds - 1 tablespoon (optional) for garnish
Steps
- Start by cutting the pork belly into 2 cm thick slices and set aside.
- In a large pot, combine soy sauce, water, rice wine, brown sugar, minced garlic, sliced ginger, and black pepper to create the braising sauce.
- Add the pork belly slices to the pot and ensure they are well coated with the sauce.
- Bring the mixture to a boil over medium heat, then reduce to low heat and cover the pot.
- Let the pork belly simmer for about 60 minutes, stirring occasionally, until the meat is tender.
- After 60 minutes, add the sliced carrot and chopped green onion to the pot, then cover and cook for an additional 15-20 minutes.
- Once cooked, remove from heat and drizzle with sesame oil. Let it rest for a few minutes.
- Serve the braised pork belly hot, garnished with sesame seeds if desired.
