Ingredients

  • Pork belly - 400 grams
  • Soy sauce - 60 ml
  • Water - 200 ml
  • Rice wine (Mirin) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 4 cloves, minced
  • Ginger - 10 grams, sliced
  • Green onion - 2 stalks, chopped
  • Carrot - 1 medium, sliced
  • Sesame oil - 1 teaspoon (5 ml)
  • Black pepper - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (optional) for garnish

Steps

  1. Start by cutting the pork belly into 2 cm thick slices and set aside.
  2. In a large pot, combine soy sauce, water, rice wine, brown sugar, minced garlic, sliced ginger, and black pepper to create the braising sauce.
  3. Add the pork belly slices to the pot and ensure they are well coated with the sauce.
  4. Bring the mixture to a boil over medium heat, then reduce to low heat and cover the pot.
  5. Let the pork belly simmer for about 60 minutes, stirring occasionally, until the meat is tender.
  6. After 60 minutes, add the sliced carrot and chopped green onion to the pot, then cover and cook for an additional 15-20 minutes.
  7. Once cooked, remove from heat and drizzle with sesame oil. Let it rest for a few minutes.
  8. Serve the braised pork belly hot, garnished with sesame seeds if desired.
