  • Burdock root - 200 grams

  • Water - 200 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sugar substitute (like erythritol) - 1 teaspoon
  • Green onion - 1 stalk, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Peel the burdock root and cut it into thin matchstick-sized pieces.
  2. Soak the burdock root in water for about 10 minutes to reduce bitterness, then drain.
  3. In a pot, combine soy sauce, sesame oil, water, minced garlic, grated ginger, and sugar substitute over medium heat.
  4. Add the drained burdock root to the pot and bring to a gentle boil.
  5. Reduce the heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally, until the burdock is tender.
  6. Once cooked, remove from heat and sprinkle with chopped green onion and sesame seeds before serving.
