- Rice cakes - 200 grams
- Carrot - 50 grams, julienned
- Zucchini - 50 grams, julienned
- Green onion - 2 stalks, chopped
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochujang (Korean chili paste) - 1 tablespoon
- Sugar - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Sesame seeds - 1 teaspoon, toasted
Steps
- Soak the rice cakes in warm water for about 10 minutes to soften them, then drain.
- Heat vegetable oil in a non-stick skillet over medium heat.
- Add the julienned carrots and zucchini to the skillet, and stir-fry for 3-4 minutes until they are slightly tender.
- Stir in the softened rice cakes and continue to cook for another 3 minutes, stirring frequently.
- In a small bowl, mix together the soy sauce, sesame oil, gochujang, and sugar.
- Pour the sauce over the rice cakes and vegetables in the skillet, and stir well to combine, cooking for an additional 2-3 minutes.
- Add the chopped green onion and toss everything together for another minute.
- Remove from heat, sprinkle with toasted sesame seeds, and serve immediately.
