Ingredients

  • Rice cakes - 200 grams
  • Carrot - 50 grams, julienned
  • Zucchini - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 teaspoon, toasted

Steps

  1. Soak the rice cakes in warm water for about 10 minutes to soften them, then drain.
  2. Heat vegetable oil in a non-stick skillet over medium heat.
  3. Add the julienned carrots and zucchini to the skillet, and stir-fry for 3-4 minutes until they are slightly tender.
  4. Stir in the softened rice cakes and continue to cook for another 3 minutes, stirring frequently.
  5. In a small bowl, mix together the soy sauce, sesame oil, gochujang, and sugar.
  6. Pour the sauce over the rice cakes and vegetables in the skillet, and stir well to combine, cooking for an additional 2-3 minutes.
  7. Add the chopped green onion and toss everything together for another minute.
  8. Remove from heat, sprinkle with toasted sesame seeds, and serve immediately.
