- Bell pepper, sliced - 1 medium (about 100 grams)
- Zucchini, sliced - 1 small (about 100 grams)
- Garlic, minced - 2 cloves
- Soy sauce, low sodium - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onions, chopped - 2 stalks
- Sesame seeds - 1 tablespoon
- Black pepper - to taste
Steps
- Cook the Korean wheat noodles according to package instructions, drain, and set aside.
- In a large pan or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the broccoli, carrot, bell pepper, and zucchini to the pan. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
- In a small bowl, mix the soy sauce, sesame oil, and black pepper.
- Add the cooked noodles to the pan with the vegetables. Pour the soy sauce mixture over the noodles and toss everything together. Stir-fry for another 2-3 minutes until heated through.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
