- Zucchini - 150 grams, sliced
- Carrot - 100 grams, julienned
- Bell pepper (red) - 100 grams, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chicken breast - 200 grams, thinly sliced
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and season with salt and black pepper. Cook for about 5-7 minutes until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.
- Add the zucchini, carrot, bell pepper, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the cooked chicken to the skillet and pour in the coconut aminos. Stir well to combine and cook for an additional 2 minutes.
- Garnish with chopped green onions and sesame seeds before serving.
