Ingredients

  • Zucchini - 150 grams, sliced
  • Carrot - 100 grams, julienned
  • Bell pepper (red) - 100 grams, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chicken breast - 200 grams, thinly sliced
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast and season with salt and black pepper. Cook for about 5-7 minutes until browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.
  5. Add the zucchini, carrot, bell pepper, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  6. Return the cooked chicken to the skillet and pour in the coconut aminos. Stir well to combine and cook for an additional 2 minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.
