Ingredients

  • Buckwheat noodles - 150 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of water to a boil. Add buckwheat noodles and cook according to package instructions (usually about 5-7 minutes).
  2. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
  3. In a large skillet, heat vegetable oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the julienned cucumber, carrot, and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
  5. In a small bowl, mix together soy sauce, sesame oil, gochujang, and rice vinegar to create the sauce.
  6. Add the cooked buckwheat noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2 minutes.
  7. Remove from heat and stir in chopped green onions. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with sesame seeds.
