- Buckwheat noodles - 150 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochujang (Korean chili paste) - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of water to a boil. Add buckwheat noodles and cook according to package instructions (usually about 5-7 minutes).
- Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
- In a large skillet, heat vegetable oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the julienned cucumber, carrot, and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
- In a small bowl, mix together soy sauce, sesame oil, gochujang, and rice vinegar to create the sauce.
- Add the cooked buckwheat noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2 minutes.
- Remove from heat and stir in chopped green onions. Season with salt and black pepper to taste.
- Serve immediately, garnished with sesame seeds.
