Ingredients

  • Sweet potato noodles - 100 grams
  • Carrot - 50 grams, julienned
  • Bell pepper - 50 grams, thinly sliced
  • Zucchini - 50 grams, julienned
  • Scallions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the sweet potato noodles in warm water for about 10 minutes until they soften, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat and sauté the minced garlic until fragrant, about 30 seconds.
  3. Add the julienned carrot, bell pepper, and zucchini to the skillet. Stir-fry for about 3-4 minutes until the vegetables are just tender.
  4. Push the vegetables to one side of the skillet and add the softened sweet potato noodles to the other side.
  5. Pour the soy sauce, sesame oil, and gochugaru over the noodles, mixing everything together until well combined and heated through, about 2-3 minutes.
  6. Add the chopped scallions and sesame seeds, and toss to combine. Season with salt and black pepper to taste.
