- Sweet potato noodles - 100 grams
- Carrot - 50 grams, julienned
- Bell pepper - 50 grams, thinly sliced
- Zucchini - 50 grams, julienned
- Scallions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the sweet potato noodles in warm water for about 10 minutes until they soften, then drain and set aside.
- Heat olive oil in a large skillet over medium heat and sauté the minced garlic until fragrant, about 30 seconds.
- Add the julienned carrot, bell pepper, and zucchini to the skillet. Stir-fry for about 3-4 minutes until the vegetables are just tender.
- Push the vegetables to one side of the skillet and add the softened sweet potato noodles to the other side.
- Pour the soy sauce, sesame oil, and gochugaru over the noodles, mixing everything together until well combined and heated through, about 2-3 minutes.
- Add the chopped scallions and sesame seeds, and toss to combine. Season with salt and black pepper to taste.
