- Sweet potato noodles (dangmyeon) - 100g
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Cabbage - 100g, shredded
- Green bell pepper - 1 medium, sliced
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sesame seeds - 1 tablespoon (for garnish)
- Spring onion - 1 stalk, chopped (for garnish)
Steps
- Soak the sweet potato noodles in warm water for about 10 minutes until softened, then drain and set aside.
- Heat vegetable oil in a large pan or wok over medium heat, then add the minced garlic and sliced onion. Sauté until fragrant and translucent.
- Add the julienned carrot, zucchini, shredded cabbage, and sliced green bell pepper to the pan. Stir-fry the vegetables for about 5-7 minutes until they begin to soften.
- Add the soaked sweet potato noodles to the pan along with soy sauce, sesame oil, and black pepper. Stir-fry everything together for another 3-5 minutes until the noodles are heated through and well combined with the vegetables.
- Remove from heat and transfer the Bokkeum Myeon to serving plates. Garnish with chopped spring onion and sesame seeds before serving.
