Ingredients

  • Cauliflower rice - 200 grams
  • Chicken breast, diced - 100 grams
  • Carrot, finely chopped - 50 grams
  • Zucchini, finely chopped - 50 grams
  • Spinach, chopped - 30 grams
  • Green onion, chopped - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Water or chicken broth - 500 milliliters
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Heat sesame oil in a large pot over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add diced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
  4. Stir in chopped carrots and zucchini, cooking for an additional 3-4 minutes.
  5. Add cauliflower rice and stir well to combine with the vegetables and chicken.
  6. Pour in water or chicken broth and bring to a boil.
  7. Reduce heat to a simmer, add chopped spinach, coconut aminos, salt, and pepper to taste.
  8. Let it simmer for 10-15 minutes until the mixture thickens to a porridge-like consistency.
  9. Serve warm, garnished with chopped green onion and sesame seeds.
