- Cauliflower rice - 200 grams
- Chicken breast, diced - 100 grams
- Carrot, finely chopped - 50 grams
- Zucchini, finely chopped - 50 grams
- Spinach, chopped - 30 grams
- Green onion, chopped - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Water or chicken broth - 500 milliliters
- Salt - to taste
- Pepper - to taste
- Sesame seeds - for garnish
Steps
- Heat sesame oil in a large pot over medium heat.
- Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add diced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
- Stir in chopped carrots and zucchini, cooking for an additional 3-4 minutes.
- Add cauliflower rice and stir well to combine with the vegetables and chicken.
- Pour in water or chicken broth and bring to a boil.
- Reduce heat to a simmer, add chopped spinach, coconut aminos, salt, and pepper to taste.
- Let it simmer for 10-15 minutes until the mixture thickens to a porridge-like consistency.
- Serve warm, garnished with chopped green onion and sesame seeds.
