Ingredients
- Eggs - 4 large
- Carrots - 100 grams, julienned
- Zucchini - 100 grams, julienned
- Coconut aminos - 4 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- In a pot, bring water to a boil and gently add the eggs. Boil for 8-10 minutes for hard-boiled eggs.
- Once cooked, transfer the eggs to an ice bath to cool for 5 minutes, then peel and set aside.
- In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add the julienned carrots and zucchini to the skillet, sautéing for another 5 minutes until slightly softened.
- Stir in the coconut aminos and salt to taste, mixing well with the vegetables.
- Add the peeled boiled eggs to the skillet, gently stirring to coat them with the sauce and vegetables. Cook for an additional 3-5 minutes.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
