Ingredients

  • Eggs - 4 large
  • Carrots - 100 grams, julienned
  • Zucchini - 100 grams, julienned
  • Coconut aminos - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. In a pot, bring water to a boil and gently add the eggs. Boil for 8-10 minutes for hard-boiled eggs.
  2. Once cooked, transfer the eggs to an ice bath to cool for 5 minutes, then peel and set aside.
  3. In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  4. Add the julienned carrots and zucchini to the skillet, sautéing for another 5 minutes until slightly softened.
  5. Stir in the coconut aminos and salt to taste, mixing well with the vegetables.
  6. Add the peeled boiled eggs to the skillet, gently stirring to coat them with the sauce and vegetables. Cook for an additional 3-5 minutes.
  7. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
