Ingredients

  • Zucchini - 150g
  • Carrot - 100g
  • Bell Pepper (red) - 100g
  • Mushrooms (shiitake) - 100g
  • Chicken Breast - 200g
  • Garlic - 3 cloves
  • Fresh Ginger - 1 tsp
  • Coconut Aminos - 3 tbsp
  • Sesame Oil - 1 tbsp
  • Olive Oil - 1 tbsp
  • Salt - 1/2 tsp
  • Black Pepper - 1/4 tsp
  • Green Onions - 2 stalks
  • Sesame Seeds - 1 tbsp

Steps

  1. Prepare all the vegetables: thinly slice the zucchini, carrot, bell pepper, and mushrooms. Mince the garlic and ginger.
  2. Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
  3. Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until cooked through. Remove the chicken from the pan and set aside.
  4. In the same skillet, add sesame oil, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
  5. Add the sliced vegetables (zucchini, carrot, bell pepper, and mushrooms) to the skillet. Stir-fry for about 5-6 minutes until they are tender but still crisp.
  6. Return the cooked chicken to the skillet, add coconut aminos, and mix well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Garnish with chopped green onions and sesame seeds before serving.
