- Zucchini - 150g
- Carrot - 100g
- Bell Pepper (red) - 100g
- Mushrooms (shiitake) - 100g
- Chicken Breast - 200g
- Garlic - 3 cloves
- Fresh Ginger - 1 tsp
- Coconut Aminos - 3 tbsp
- Sesame Oil - 1 tbsp
- Olive Oil - 1 tbsp
- Salt - 1/2 tsp
- Black Pepper - 1/4 tsp
- Green Onions - 2 stalks
- Sesame Seeds - 1 tbsp
Steps
- Prepare all the vegetables: thinly slice the zucchini, carrot, bell pepper, and mushrooms. Mince the garlic and ginger.
- Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, add sesame oil, garlic, and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the sliced vegetables (zucchini, carrot, bell pepper, and mushrooms) to the skillet. Stir-fry for about 5-6 minutes until they are tender but still crisp.
- Return the cooked chicken to the skillet, add coconut aminos, and mix well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Garnish with chopped green onions and sesame seeds before serving.
