Ingredients

  • Cooked white rice - 1 cup

  • Sesame oil - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Green onions (sliced) - 2 stalks
  • Carrot (julienned) - 1/2 medium
  • Bell pepper (sliced) - 1/2 medium
  • Zucchini (sliced) - 1/2 medium
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish (optional)

Steps

  1. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the julienned carrot, sliced bell pepper, and zucchini to the skillet. Stir-fry the vegetables for about 5 minutes until they start to soften.
  3. Stir in the gochugaru, soy sauce, and sesame oil, mixing well to combine with the vegetables.
  4. Add the cooked rice to the skillet, breaking up any clumps, and stir-fry everything together for another 3-5 minutes until heated through.
  5. Season with salt and black pepper to taste. Add the sliced green onions and toss everything to combine.
