Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sliced onion to the skillet, sautéing until the onion becomes translucent, about 2-3 minutes.
- Add the julienned carrot, zucchini, and bell pepper, and stir-fry for another 5 minutes until the vegetables are tender but still crisp.
- Slice the eomuk into bite-sized pieces and add them to the skillet, stirring well to combine with the vegetables.
- In a small bowl, mix soy sauce, sesame oil, and gochugaru, then pour this sauce over the stir-fry.
- Continue to stir-fry for an additional 3-4 minutes, ensuring everything is well coated in the sauce.
- Remove from heat and sprinkle with chopped green onion and toasted sesame seeds before serving.
