Ingredients
- Cauliflower - 400 grams
- Carrot - 1 medium (about 70 grams), diced
- Zucchini - 1 small (about 150 grams), diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Egg - 2 large
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Begin by preparing the cauliflower. Chop it into florets and pulse in a food processor until it resembles rice grains. You may also grate it using a box grater.
- In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add diced carrots and zucchini to the skillet. Stir-fry for about 5 minutes until they're tender.
- Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked and then mix them with the vegetables.
- Add the cauliflower rice to the skillet, stirring everything together. Pour in the coconut aminos and sesame oil, mixing well to combine.
- Season with salt and black pepper to taste. Stir-fry for an additional 3-5 minutes until the cauliflower is tender but not mushy.
- Remove from heat and sprinkle with chopped green onions and sesame seeds before serving.
