Ingredients

  • Carrot - 50 grams, julienned
  • Zucchini - 100 grams, julienned
  • Bell pepper (red) - 50 grams, thinly sliced
  • Mushrooms (shiitake) - 50 grams, sliced
  • Spinach - 50 grams, roughly chopped
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 teaspoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the julienned carrots and zucchini to the skillet and stir-fry for 3-4 minutes until they begin to soften.
  4. Add the sliced bell pepper and mushrooms, continue to stir-fry for another 3-4 minutes until all vegetables are tender.
  5. Stir in the chopped spinach and cook for an additional 1-2 minutes until wilted.
  6. Add the soy sauce, sugar, salt, and black pepper to taste, mixing well to combine all ingredients.
  7. Remove from heat, sprinkle with toasted sesame seeds, and serve warm.
