Ingredients

  • Wheat noodles - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Gojujang (Korean red pepper paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Water - for boiling noodles

Steps

  1. Bring a pot of water to a boil and cook the wheat noodles according to package instructions, usually about 6-8 minutes.
  2. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set them aside to cool.
  3. In a small bowl, mix together gochujang, soy sauce, rice vinegar, sesame oil, sugar, and minced garlic to create the sauce.
  4. In a large bowl, combine the cooled noodles with the julienned cucumber, carrot, sliced red bell pepper, and chopped green onion.
  5. Pour the sauce over the noodle and vegetable mixture, tossing everything together until well coated.
  6. Serve the Bibim Guksu in two bowls, garnishing with toasted sesame seeds.
