- Wheat noodles - 200 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, toasted
- Gojujang (Korean red pepper paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Water - for boiling noodles
Steps
- Bring a pot of water to a boil and cook the wheat noodles according to package instructions, usually about 6-8 minutes.
- Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set them aside to cool.
- In a small bowl, mix together gochujang, soy sauce, rice vinegar, sesame oil, sugar, and minced garlic to create the sauce.
- In a large bowl, combine the cooled noodles with the julienned cucumber, carrot, sliced red bell pepper, and chopped green onion.
- Pour the sauce over the noodle and vegetable mixture, tossing everything together until well coated.
- Serve the Bibim Guksu in two bowls, garnishing with toasted sesame seeds.
