- Butter lettuce leaves - 8 large
- Cooked chicken breast, shredded - 200 grams
- Kimchi - 100 grams
- Carrot, julienned - 50 grams
- Cucumber, julienned - 50 grams
- Sesame oil - 1 tablespoon
- Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
- Garlic, minced - 1 clove
- Ginger, minced - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Green onions, chopped - 2 stalks
Steps
- In a large mixing bowl, combine the shredded chicken breast, kimchi, carrot, cucumber, sesame oil, soy sauce, minced garlic, and minced ginger. Mix well until all ingredients are evenly coated.
- Take a large butter lettuce leaf and place a generous spoonful of the chicken mixture in the center of the leaf.
- Sprinkle sesame seeds and chopped green onions over the filling.
- Fold the sides of the lettuce leaf over the filling and roll it up to create a wrap.
- Repeat the process for the remaining lettuce leaves and filling.
- Serve immediately with extra kimchi on the side if desired.
