Ingredients

  • Butter lettuce leaves - 8 large
  • Cooked chicken breast, shredded - 200 grams
  • Kimchi - 100 grams
  • Carrot, julienned - 50 grams
  • Cucumber, julienned - 50 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
  • Garlic, minced - 1 clove
  • Ginger, minced - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onions, chopped - 2 stalks

Steps

  1. In a large mixing bowl, combine the shredded chicken breast, kimchi, carrot, cucumber, sesame oil, soy sauce, minced garlic, and minced ginger. Mix well until all ingredients are evenly coated.
  2. Take a large butter lettuce leaf and place a generous spoonful of the chicken mixture in the center of the leaf.
  3. Sprinkle sesame seeds and chopped green onions over the filling.
  4. Fold the sides of the lettuce leaf over the filling and roll it up to create a wrap.
  5. Repeat the process for the remaining lettuce leaves and filling.
  6. Serve immediately with extra kimchi on the side if desired.
