  • Cucumber - 1 medium
  • Korean radish (mu) - 100 grams
  • Salt - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Garlic - 1 clove, minced
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Green onion - 1 stalk, chopped

Steps

  1. Wash the cucumber and radish thoroughly. Cut the cucumber into thin slices and the radish into matchstick pieces.
  2. In a bowl, combine the cucumber and radish with 1 teaspoon of salt. Let it sit for about 10 minutes to release excess water.
  3. In another bowl, mix together sesame oil, rice vinegar, gochugaru, minced garlic, and sugar to create the dressing.
  4. After the vegetables have released water, rinse them under cold water and drain well. Add the vegetables to the dressing and toss to combine.
  5. Sprinkle sesame seeds and chopped green onion over the top. Serve immediately or let it marinate in the refrigerator for 10 minutes for enhanced flavor.
