Ingredients

  • Brown rice - 150 grams
  • Spinach - 100 grams
  • Carrot - 1 medium, julienned
  • Eggs - 2 large
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Toasted sesame seeds - 1 teaspoon
  • Kimchi - 100 grams
  • Cucumber - 1 small, sliced

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook it in a rice cooker or pot according to package instructions.
  2. While the rice is cooking, bring a pot of water to a boil and blanch the spinach for 1-2 minutes until wilted, then drain and rinse under cold water.
  3. Squeeze out excess water from the spinach and chop it roughly. In a bowl, mix the spinach with 1/2 tablespoon of soy sauce and 1/2 tablespoon of sesame oil.
  4. In a separate pan, heat 1 teaspoon of sesame oil over medium heat, add the minced garlic and sauté for 1 minute until fragrant. Add the julienned carrot and stir-fry for about 3-4 minutes until tender. Season with 1/2 tablespoon of soy sauce.
  5. In another pan, fry the eggs sunny-side up to your liking.
  6. Once the rice is ready, fluff it with a fork and divide it into two bowls.
  7. Top each bowl of rice with the sautéed carrots, seasoned spinach, a fried egg, a small portion of kimchi, and cucumber slices. Sprinkle toasted sesame seeds on top for garnish.
