Ingredients
- Brown rice - 150 grams
- Spinach - 100 grams
- Carrot - 1 medium, julienned
- Eggs - 2 large
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Toasted sesame seeds - 1 teaspoon
- Kimchi - 100 grams
- Cucumber - 1 small, sliced
Steps
- Rinse the brown rice under cold water until the water runs clear, then cook it in a rice cooker or pot according to package instructions.
- While the rice is cooking, bring a pot of water to a boil and blanch the spinach for 1-2 minutes until wilted, then drain and rinse under cold water.
- Squeeze out excess water from the spinach and chop it roughly. In a bowl, mix the spinach with 1/2 tablespoon of soy sauce and 1/2 tablespoon of sesame oil.
- In a separate pan, heat 1 teaspoon of sesame oil over medium heat, add the minced garlic and sauté for 1 minute until fragrant. Add the julienned carrot and stir-fry for about 3-4 minutes until tender. Season with 1/2 tablespoon of soy sauce.
- In another pan, fry the eggs sunny-side up to your liking.
- Once the rice is ready, fluff it with a fork and divide it into two bowls.
- Top each bowl of rice with the sautéed carrots, seasoned spinach, a fried egg, a small portion of kimchi, and cucumber slices. Sprinkle toasted sesame seeds on top for garnish.
