Ingredients

  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onion - 1, finely chopped
  • Salt - to taste

Steps

  1. Soak the dried seaweed in cold water for about 10 minutes until it rehydrates and expands.
  2. Drain the seaweed and gently squeeze out excess water, then chop it into bite-sized pieces.
  3. In a mixing bowl, combine the sesame oil, soy sauce, rice vinegar, and sugar. Stir until the sugar is dissolved.
  4. Add the chopped seaweed, sliced cucumber, and julienned carrot to the bowl. Toss well to coat all ingredients in the dressing.
  5. Sprinkle with sesame seeds and chopped green onion. Adjust salt to taste.
