Ingredients

  • Cooked rice - 200 grams (1 cup)
  • Spinach - 100 grams (1 cup, chopped)
  • Carrot - 50 grams (1 small, julienned)
  • Eggs - 2 large
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Garlic - 1 clove (minced)
  • Green onion - 1 stalk (chopped)
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. In a pan, heat 1/2 tablespoon of sesame oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
  2. Add the chopped spinach and shredded carrots to the pan. Season with salt and pepper, and stir-fry for about 3-4 minutes until the spinach is wilted and the carrots are tender. Remove from heat and set aside.
  3. In the same pan, add the remaining sesame oil and crack the eggs into the pan. Fry them sunny-side up or to your desired doneness, seasoning with a pinch of salt.
  4. To assemble, place the cooked rice in bowls, top with the sautéed spinach and carrots, and add the fried eggs on top.
  5. Drizzle with soy sauce and sprinkle with chopped green onion and sesame seeds before serving.
