Ingredients
- Cooked rice - 200 grams (1 cup)
- Spinach - 100 grams (1 cup, chopped)
- Carrot - 50 grams (1 small, julienned)
- Eggs - 2 large
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Garlic - 1 clove (minced)
- Green onion - 1 stalk (chopped)
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- In a pan, heat 1/2 tablespoon of sesame oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
- Add the chopped spinach and shredded carrots to the pan. Season with salt and pepper, and stir-fry for about 3-4 minutes until the spinach is wilted and the carrots are tender. Remove from heat and set aside.
- In the same pan, add the remaining sesame oil and crack the eggs into the pan. Fry them sunny-side up or to your desired doneness, seasoning with a pinch of salt.
- To assemble, place the cooked rice in bowls, top with the sautéed spinach and carrots, and add the fried eggs on top.
- Drizzle with soy sauce and sprinkle with chopped green onion and sesame seeds before serving.
