Ingredients

  • Spaghetti - 200 grams
  • Zucchini - 100 grams, julienned
  • Carrot - 100 grams, julienned
  • Shiitake mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Boil a pot of salted water and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the zucchini, carrot, and shiitake mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  4. In a small bowl, mix the soy sauce, gochujang, and sugar to create the sauce.
  5. Add the cooked spaghetti to the skillet with the sautéed vegetables. Pour the sauce over the pasta and toss well to combine, cooking for an additional 2-3 minutes to heat through.
  6. Season with salt and pepper to taste. Remove from heat and sprinkle with toasted sesame seeds and chopped green onions before serving.
