Ingredients
- Spaghetti - 200 grams
- Zucchini - 100 grams, julienned
- Carrot - 100 grams, julienned
- Shiitake mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochujang (Korean chili paste) - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame seeds - 1 tablespoon, toasted
- Green onions - 2 stalks, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Boil a pot of salted water and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the zucchini, carrot, and shiitake mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- In a small bowl, mix the soy sauce, gochujang, and sugar to create the sauce.
- Add the cooked spaghetti to the skillet with the sautéed vegetables. Pour the sauce over the pasta and toss well to combine, cooking for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste. Remove from heat and sprinkle with toasted sesame seeds and chopped green onions before serving.
