- Edamame (shelled) - 150 grams
- Fresh spinach - 100 grams
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Green onion - 1 stalk, chopped
Steps
- Boil water in a pot and add the shelled edamame. Cook for 5 minutes until tender, then drain and set aside.
- In the same pot, add the fresh spinach and blanch for about 1 minute until wilted. Drain and rinse under cold water to stop cooking.
- In a mixing bowl, combine the minced garlic, sesame oil, soy sauce, rice vinegar, and gochugaru to create the dressing.
- Add the drained edamame and spinach to the bowl with the dressing. Toss well until everything is evenly coated.
- Transfer to a serving dish and garnish with sesame seeds and chopped green onion before serving.
