Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 4 cups (1 liter)
  • Carrot - 1 medium, diced (100g)
  • Zucchini - 1 medium, diced (150g)
  • Spinach - 1 cup, chopped (30g)
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon (15ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Green onions - 2 stalks, chopped

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a large pot, combine the soaked rice and 4 cups of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally.
  4. Add the diced carrot, zucchini, and minced garlic to the pot, and continue to simmer for another 5-10 minutes until the vegetables are tender.
  5. Stir in the chopped spinach, sesame oil, salt, and black pepper. Cook for an additional 2 minutes until the spinach is wilted.
  6. Remove from heat and serve hot, garnished with chopped green onions.
