Ingredients
- Short-grain rice - 1 cup (200g)
- Water - 4 cups (1 liter)
- Carrot - 1 medium, diced (100g)
- Zucchini - 1 medium, diced (150g)
- Spinach - 1 cup, chopped (30g)
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon (15ml)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Green onions - 2 stalks, chopped
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
- In a large pot, combine the soaked rice and 4 cups of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally.
- Add the diced carrot, zucchini, and minced garlic to the pot, and continue to simmer for another 5-10 minutes until the vegetables are tender.
- Stir in the chopped spinach, sesame oil, salt, and black pepper. Cook for an additional 2 minutes until the spinach is wilted.
- Remove from heat and serve hot, garnished with chopped green onions.
