- Eggs - 4 large
- Spinach - 100 grams, chopped
- Carrot - 50 grams, grated
- Green onions - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons for frying
- Tofu - 100 grams, cubed
- Garlic - 1 clove, minced
Steps
- In a mixing bowl, whisk the eggs, soy sauce, salt, and black pepper until well combined.
- Add the chopped spinach, grated carrot, and green onions to the egg mixture and stir to combine.
- Heat 1 tablespoon of vegetable oil in a non-stick frying pan over medium heat.
- Pour half of the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes until the edges start to set and the bottom is golden brown.
- Flip the pancake carefully and cook for another 2-3 minutes on the other side. Remove from the pan and keep warm. Repeat with the remaining egg mixture to make the second pancake.
- In the same pan, add the remaining vegetable oil and sauté the cubed tofu with minced garlic until golden brown, about 5-7 minutes.
- Serve the egg pancakes warm, alongside the sautéed tofu for a complete breakfast.
