Ingredients

  • Eggs - 4 large
  • Spinach - 100 grams, chopped
  • Carrot - 50 grams, grated
  • Green onions - 2 stalks, finely chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons for frying
  • Tofu - 100 grams, cubed
  • Garlic - 1 clove, minced

Steps

  1. In a mixing bowl, whisk the eggs, soy sauce, salt, and black pepper until well combined.
  2. Add the chopped spinach, grated carrot, and green onions to the egg mixture and stir to combine.
  3. Heat 1 tablespoon of vegetable oil in a non-stick frying pan over medium heat.
  4. Pour half of the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes until the edges start to set and the bottom is golden brown.
  5. Flip the pancake carefully and cook for another 2-3 minutes on the other side. Remove from the pan and keep warm. Repeat with the remaining egg mixture to make the second pancake.
  6. In the same pan, add the remaining vegetable oil and sauté the cubed tofu with minced garlic until golden brown, about 5-7 minutes.
  7. Serve the egg pancakes warm, alongside the sautéed tofu for a complete breakfast.
