Ingredients

  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100g, shredded
  • Parmesan cheese - 30g, grated
  • Green onions - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and slice the zucchini into 1/2 cm thick rounds.
  3. In a large bowl, combine the olive oil, minced garlic, soy sauce, sesame oil, and black pepper. Add the zucchini slices and toss until well coated.
  4. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 15 minutes.
  6. Remove the baking sheet from the oven and sprinkle the shredded cheddar and grated Parmesan cheese over the zucchini.
  7. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped green onions and toasted sesame seeds before serving.
