Ingredients

  • Fresh spinach - 200 grams
  • Eggs - 4 large
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red chili pepper - 1, finely chopped (optional)
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 50 grams, grated (optional)
  • Sesame seeds - 1 tablespoon, for garnish
  • Green onions - 1 tablespoon, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the sesame oil over medium heat and sauté the chopped onion and garlic until translucent.
  3. Add the fresh spinach and red chili pepper (if using) to the skillet, cooking until the spinach is wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a bowl, beat the eggs and mix in the soy sauce, salt, and black pepper.
  5. Once the spinach mixture has cooled, combine it with the egg mixture, mixing well.
  6. Transfer the mixture to a greased baking dish and sprinkle the grated cheddar cheese on top, if using.
  7. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is slightly golden.
  8. Remove from the oven and let it cool for a couple of minutes before garnishing with sesame seeds and chopped green onions.
