- Fresh spinach - 200 grams
- Eggs - 4 large
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Red chili pepper - 1, finely chopped (optional)
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 50 grams, grated (optional)
- Sesame seeds - 1 tablespoon, for garnish
- Green onions - 1 tablespoon, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the sesame oil over medium heat and sauté the chopped onion and garlic until translucent.
- Add the fresh spinach and red chili pepper (if using) to the skillet, cooking until the spinach is wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a bowl, beat the eggs and mix in the soy sauce, salt, and black pepper.
- Once the spinach mixture has cooled, combine it with the egg mixture, mixing well.
- Transfer the mixture to a greased baking dish and sprinkle the grated cheddar cheese on top, if using.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is slightly golden.
- Remove from the oven and let it cool for a couple of minutes before garnishing with sesame seeds and chopped green onions.
