Ingredients

  • Baked potatoes - 2 medium
  • Green onion - 2 stalks, finely chopped
  • Carrot - 1 small, grated
  • Zucchini - 1 small, grated
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Cooking oil - for frying

Steps

  1. Preheat the oven to 200°C (400°F) and bake the potatoes for 45-60 minutes until tender.
  2. Once the potatoes are baked and slightly cooled, peel them and mash them in a large mixing bowl.
  3. Add the chopped green onion, grated carrot, grated zucchini, egg, flour, salt, and black pepper to the mashed potatoes. Mix until well combined.
  4. Heat a non-stick frying pan over medium heat and add a little cooking oil.
  5. Scoop out portions of the potato mixture and flatten them into pancakes (about 1 cm thick) in the pan.
  6. Fry each pancake for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the pancakes from the pan and place them on a paper towel to absorb excess oil.
  8. Drizzle with sesame oil before serving and enjoy with a dipping sauce of your choice.
