- Baked potatoes - 2 medium
- Green onion - 2 stalks, finely chopped
- Carrot - 1 small, grated
- Zucchini - 1 small, grated
- Egg - 1 large
- All-purpose flour - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 tablespoon
- Cooking oil - for frying
Steps
- Preheat the oven to 200°C (400°F) and bake the potatoes for 45-60 minutes until tender.
- Once the potatoes are baked and slightly cooled, peel them and mash them in a large mixing bowl.
- Add the chopped green onion, grated carrot, grated zucchini, egg, flour, salt, and black pepper to the mashed potatoes. Mix until well combined.
- Heat a non-stick frying pan over medium heat and add a little cooking oil.
- Scoop out portions of the potato mixture and flatten them into pancakes (about 1 cm thick) in the pan.
- Fry each pancake for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the pancakes from the pan and place them on a paper towel to absorb excess oil.
- Drizzle with sesame oil before serving and enjoy with a dipping sauce of your choice.
