- cooked jasmine rice - 200 grams
- kimchi - 100 grams, chopped
- firm tofu - 150 grams, crumbled
- green onions - 2, finely chopped
- carrot - 1 small, diced
- egg - 1, beaten
- soy sauce - 2 tablespoons
- sesame oil - 1 tablespoon
- gochujang (Korean chili paste) - 1 tablespoon
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- salt - to taste
- black pepper - to taste
- sesame seeds - for garnish
- nori (seaweed) - for garnish, optional
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the cooked jasmine rice, chopped kimchi, crumbled tofu, green onions, diced carrot, beaten egg, soy sauce, sesame oil, gochujang, minced garlic, and grated ginger. Mix well until all ingredients are evenly combined.
- Season the mixture with salt and black pepper to taste.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the top is slightly crispy.
- Once baked, remove from the oven and let it cool for a few minutes.
- Garnish with sesame seeds and strips of nori, if desired, before serving.
