- Sweet potato noodles - 150 grams
- Beef sirloin, thinly sliced - 100 grams
- Carrot, julienned - 1 medium
- Bell pepper, sliced - 1 medium (red or yellow)
- Zucchini, julienned - 1 medium
- Spinach, fresh - 50 grams
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Cook the sweet potato noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced beef to the skillet, cooking until browned, about 3-4 minutes. Season with salt and black pepper to taste.
- Stir in the carrots, bell pepper, and zucchini, cooking for another 3-4 minutes until the vegetables are slightly tender.
- Add the cooked sweet potato noodles and spinach to the skillet, pouring in the coconut aminos and sesame oil. Toss everything together until well combined and the spinach is wilted.
- Transfer the mixture into a lightly greased baking dish, spreading it evenly. Sprinkle sesame seeds on top.
- Bake in the preheated oven for 15-20 minutes, until heated through and slightly crispy on top.
- Remove from the oven and let it cool for a few minutes before serving.
