Ingredients

  • Sweet potato noodles - 150 grams
  • Beef sirloin, thinly sliced - 100 grams
  • Carrot, julienned - 1 medium
  • Bell pepper, sliced - 1 medium (red or yellow)
  • Zucchini, julienned - 1 medium
  • Spinach, fresh - 50 grams
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the sweet potato noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  4. Add the sliced beef to the skillet, cooking until browned, about 3-4 minutes. Season with salt and black pepper to taste.
  5. Stir in the carrots, bell pepper, and zucchini, cooking for another 3-4 minutes until the vegetables are slightly tender.
  6. Add the cooked sweet potato noodles and spinach to the skillet, pouring in the coconut aminos and sesame oil. Toss everything together until well combined and the spinach is wilted.
  7. Transfer the mixture into a lightly greased baking dish, spreading it evenly. Sprinkle sesame seeds on top.
  8. Bake in the preheated oven for 15-20 minutes, until heated through and slightly crispy on top.
  9. Remove from the oven and let it cool for a few minutes before serving.
