Ingredients
- beef short ribs - 600 grams
- garlic, minced - 4 cloves
- ginger, grated - 1 tablespoon
- coconut aminos - 4 tablespoons
- honey - 1 tablespoon
- sesame oil - 1 tablespoon
- black pepper - 1 teaspoon
- green onions, chopped - 2 tablespoons
- carrot, julienned - 1 medium
- zucchini, sliced - 1 medium
- water - 0.5 liters
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine minced garlic, grated ginger, coconut aminos, honey, sesame oil, and black pepper to create the marinade.
- Place the beef short ribs in a large zip-top bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- After marinating, arrange the short ribs in a single layer in a baking dish. Pour any remaining marinade over the ribs.
- Add the water to the bottom of the baking dish to create steam during cooking.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
- After 1 hour, remove the foil and add the julienned carrot and sliced zucchini around the ribs. Bake uncovered for an additional 30 minutes, or until the ribs are tender and slightly caramelized.
- Once done, remove from the oven and let it rest for a few minutes before serving.
- Garnish with chopped green onions and serve hot.
