Ingredients

  • beef short ribs - 600 grams
  • garlic, minced - 4 cloves
  • ginger, grated - 1 tablespoon
  • coconut aminos - 4 tablespoons
  • honey - 1 tablespoon
  • sesame oil - 1 tablespoon
  • black pepper - 1 teaspoon
  • green onions, chopped - 2 tablespoons
  • carrot, julienned - 1 medium
  • zucchini, sliced - 1 medium
  • water - 0.5 liters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine minced garlic, grated ginger, coconut aminos, honey, sesame oil, and black pepper to create the marinade.
  3. Place the beef short ribs in a large zip-top bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. After marinating, arrange the short ribs in a single layer in a baking dish. Pour any remaining marinade over the ribs.
  5. Add the water to the bottom of the baking dish to create steam during cooking.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
  7. After 1 hour, remove the foil and add the julienned carrot and sliced zucchini around the ribs. Bake uncovered for an additional 30 minutes, or until the ribs are tender and slightly caramelized.
  8. Once done, remove from the oven and let it rest for a few minutes before serving.
  9. Garnish with chopped green onions and serve hot.
