- Carrot - 1 medium, sliced
- Potato - 1 medium, cubed
- Onion - 1 small, chopped
- Green onion - 2 stalks, chopped
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/2 teaspoon (optional)
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine soy sauce, honey, sesame oil, minced garlic, grated ginger, black pepper, and red pepper flakes to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- In a baking dish, place the marinated chicken thighs and arrange the sliced carrot, cubed potato, and chopped onion around them.
- Pour the water into the baking dish to keep the chicken moist during baking.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and has a golden color.
- Garnish with chopped green onions before serving.
