Ingredients

  • Chicken thighs (boneless, skinless) - 300 grams
  • Sweet potato - 150 grams, diced
  • Zucchini - 100 grams, sliced
  • Carrot - 100 grams, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Gochujang (Korean red chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the gochujang, soy sauce, sesame oil, honey, minced garlic, and black pepper to create the marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by dicing the sweet potato and slicing the zucchini and carrot.
  5. In a baking dish, toss the sweet potato, zucchini, and carrot with vegetable oil and a pinch of salt.
  6. Place the marinated chicken on top of the vegetables in the baking dish.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the vegetables are tender.
  9. Garnish with chopped green onions and sesame seeds before serving.
